Seaweed is considered to be the superman of superfoods. The United Nations (Cahill, P. 2016) estimates the global seaweed industry to be valued at $6 billion. A member of the seaweed family, Golden Kelp (Ecklonia radiata) is found in the seas surrounding Southern Australia. Beyond acting as a natural and sustainable source of food, packed full of essential vitamins, minerals, and antioxidants, Golden Kelp can be utilised to form nutraceutical products, is used in food preservation, cosmetics, fertilisers, animal feeds and has the potential to be developed into biofuel.
